Oatmeal Cookies with Cooked Oatmeal
Soft, chewy cookies made with leftover cooked oatmeal — a wholesome, easy treat that uses up what you have.

Ingredients
- 2 cups cooked oatmeal (plain, cooled)
- 1 egg
- 2 tbsp melted butter
- ¼ cup brown sugar
- ½ cup all-purpose flour
- ½ tsp baking powder
- ½ tsp vanilla extract
- Pinch of salt

Preheat oven to 350°F. Line a baking sheet with parchment paper.

Mix cooked oatmeal, egg, melted butter, and brown sugar in a bowl until combined.

Stir in flour, baking powder, vanilla, and salt. Mix until a soft dough forms.

Scoop tablespoon-sized mounds onto the prepared baking sheet.
