Steak Doneness Temperature Chart

A quick-reference chart for perfect steak doneness every time.

  • Rare: Remove at 115–125°F, final temp after resting ~120–130°F, cool red center.

  • Medium Rare: Remove at 125–135°F, final temp ~130–140°F, warm red center.

  • Medium: Remove at 135–145°F, final temp ~140–150°F, warm pink center.

  • Medium Well: Remove at 145–155°F, final temp ~150–160°F, slightly pink center.

  • Well Done: Remove at 155–165°F, final temp ~160–170°F, little or no pink.

  • Tip: After removing your steak, transfer it to a plate or cutting board and cover with foil. Let it rest 5–10 minutes before slicing to allow juices to redistribute.
