Ingredients

Meatloaf

  • 2 lbs ground beef
  • 1 onion, finely diced
  • 2 eggs
  • ½–¾ cup breadcrumbs (or crushed crackers)
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp salt
  • 1 tsp pepper
  • Optional: splash of milk

Glaze

  • ¼ cup ketchup
  • 1 tbsp mustard
  • 1 tbsp brown sugar (optional)

Easy Creamy Potato Salad

  • Boiled potatoes, cubed
  • Mayo
  • Mustard
  • Salt and pepper
  • Chopped pickles or relish
  • Optional: boiled eggs and celery

Instructions

Make the Meatloaf

    Mix everything gently — do not overwork the meat.

    Form into a round loaf or thick patty directly in the skillet.

    Cook on medium-low, cover, and cook through slowly.

    Flip carefully, or keep turning slightly as it cooks.

    Add glaze at the end and let it caramelize.

Easy Creamy Potato Salad

    Boil potatoes until fork-tender, then cube them.

    While still slightly warm, add mayo, mustard, salt, pepper, and chopped pickles or relish.

    Toss gently to combine — mixing warm lets the dressing soak in.

    Add boiled eggs and celery if using. Taste and adjust seasoning.
